From Northfield, IL.,  Kraft Foods Group, Inc. is voluntarily recalling the above dated and code date of Planters Cocktail Peanuts. Product was possibly exposed to water during production, this water was not intended for use in food.

Diamond Pet Foods is voluntarily recalling its Diamond Naturals Lamb Meal & Rice dry dog food because it may be contaminated with salmonella.

Buttery Tomato Baked Chicken, Bacon Potato Salad, Asparagus and Beets

Buttery Tomato Chicken Meal Potato Salad Asparagus Beats Gluten-Free

I decided to cook with what I had in the kitchen. It seems like a lot of work but actually this dinner was very easy. It's a perfect meal for the budget conscience and delicious. It is sure to impress your family as if you slaved over the stove for hours, but it only takes about an hour to make! I first started with the chicken which takes about an hour to cook.

Finished: Buttery Tomato Baked Chicken

Buttery Tomato Baked Chicken Breast

1 Max pack of Chicken Breast with or without the skin. (appx. 6 pieces)
1/4 Cup Butter (half of one stick)
1/2 Cup GF Ketchup
1/4 Cup Brown Sugar
1/2 White or Yellow Onion Diced

Heat oven to 350 degrees Fahrenheit. Rinse chicken with cold water, drip and pat dry. Place in a large roasting pan or oven safe pan/dish. Soften 1/4 butter (15 sec high in microwave or let soften out of the fridge). Rub butter all over chicken pieces. In a small bowl mix ketchup, brown sugar and onions. Scoop on top of each chicken breast. Place in heated oven for 1 hour. Half way through spoon juices over each chicken to keep chicken from drying out and tender. Remove from oven when thoroughly cooked.

Tomato Chicken Sauce
Blend ingredients with diced onion.


Place in roasting pan and bake.

Best Bacon Potato Salad
4 Slices of Bacon
5-6 Medium Red Potatoes
2 Celery Stalks
1/4 Cup GF Mayonnaise
2 Tablespoons GF Stone Ground Dijon Mustard
4 Tablespoons Plain Rice Vinegar
Salt and Pepper to taste

Boil water in a medium pot. Cut regular slices of your favorite red potatoes and place in boiling water until potatoes are tender (can poke easily with a fork). Drain from pot and place in a bowl chill in the refrigerator for appx. a half and hour. Mix in Mayonnaise, mustard, plain rice vinegar, dash of salt and pepper to taste, celery, and lastly carefully add the bacon on top. Chill until ready to serve.
Boil Potatoes and Fry Bacon.

Dice Celery and Crumble Bacon.


Asparagus and Beets Recipe
Asparagus and Beets


Simple Asparagus and Dip

One bunch of Asparagus spears
1/4 Cup Mayonnaise
Dash of Pepper

Rinse Asparagus and cut off ends of each spear. Place in a pan with a little water. Heat pan on medium until asparagus is tender but not over done. Place on a dish. In a small dish blend mayonnaise and pepper as a dip to serve aside the asparagus.

Heat asparagus in pan
Heat asparagus in a little water till tender.

Beets for color and health...

Creamy Beets

Boiled Fresh Beets sliced or 
1 Can of Beets sliced
1 Tablespoon of Mayonnaise
1 Teaspoon of Plain Rice Vinegar
Sprinkle of Pepper

Put sliced beets in a small bowl. Carefully mix in mayonnaise and vinegar. Sprinkle a little pepper and stir carefully. Use fork to serve to avoid to much of the drippy dressing.

(The chicken and asparagus can optionally be served cold for a picnic.)

Voila... Chicken should now be done and the potato salad should be chilled and ready to serve. This complete gluten free family meal is perfect for Dinner and even pack up for a great Spring or Summer picnic! The leftover chicken could be used in a salad or sandwich which pairs well with any left over potato salad. Lemonade Cake Sweet, Tangy and Gluten Free!


Lemonade Cake

1 Gluten Free Yellow Cake Mix
  • Prepare GF Cake Mix as directed on package of choice, add the following:
  • Juice and Rind of half fresh squeezed Lemon
  • 1 tablespoon of Sour Cream
  • Bake cake as directed on package
Lemonade Frosting:
  • 1/2 Cup Butter softened 
  • Juice and Rind of half fresh squeezed Lemon
  • 4 Cups Powdered Sugar
Optional:
  • Lemon slices sprinkled with sugar
  • Fresh Raspberries 
Blend ingredients well. By hand stir about 1 minute, or mix well on low electric mixer. Enough frosting for a double layer cake or oblong pan cake. Frost cake when cake is cooled. Optional: add sugared lemon slices for a more tangy treat. Or add fresh raspberries along the edge for Raspberry Lemonade Cake!

Enjoy with your favorite vanilla or sherbert ice cream and ice tea. Great for Easter, Spring or Summer treat, or as tea cake. Let me know how you like it!? 

Remove from round pans and frost when cooled.

Lemon slices with raw sugar.
So good with sherbert or vanilla ice cream.
Great with hot or iced tea.

Living Gluten-Free Meals on a Budget

If your living on a budget, you know meal planning gluten-free can be pricey. So when funds are low and your waiting for that next pay check... there's no simple gluten-free quick fixings right? Or is there?

Alysa Good Stuff Gluten Free on the Cheap Tips:


No bread, No Gluten Free Bisquick mix, No Rice Noodles? What am I going to eat?

It is good to keep some flours and starches on hand:
  • Rice Flour
  • Tapioca Flour
  • Tapioca Starch
  • Corn Starch
  • Potato Starch
  • Ground Flax Seed Meal
  • Ground Almond Meal
With these flours and starches you can mix up or add to many dishes.

Need quick rolls for lunch or dinner? Mix together 2 flours and 1 or 2 starches and some shortenening or butter cut in with a little liquid (water or milk) until dough forms and place on greased baking sheet in balls. Bake for a short time at about 350 degrees f. Now these might not make the best rolls, but add a dab of butter or put in soups for dumplings and you have a cheap addition to your meal.


There are always great meals with salads too... add steak, chunk light tuna, chicken, rice, beans, salsa, or cheese or a combination and enjoy!

Cheap salad dressings: 
  • Vinaigrette: Mix oil, vinegar, sugar, lemon juice.
  • Creamy Vinaigrette: Mix GF Mayonaise, vinegar, salt and pepper or favorite spices, optional: lemon juice.
  • Discount Thousand Island: Mix GF Mayonaise and Ketchup, salt and pepper, optional: lemon juice.
 For breakfast you can easily whip up pancake or waffle batter with the flours and starches mentioned above, mix flours, starch and baking soda. Add 1-2 eggs, 2 tablespoons or so of oil, liquid milk of choice or water and blend until slightly thick. Heat in pan or waffle maker.
